Mushrooms by Martin Nordin is an excellent cookbook for anyone looking to advance their cooking game with their favorite fungi. The instructions are clear, and the recipes are simple to make. While a well-stocked pantry is necessary for many recipes (for example, the fried, marinated shitake mushrooms with green peas and shallots called for malted vinegar, toasted sesame oil, and date syrup), the results are worth the effort, and many home cooks might find they are short an ingredient or two, making these simple recipes more expensive to execute. This cookbook is full of wonderful vegetarian and vegan recipes. Complete with a description of the different types of mushrooms, even a mushroom novice can create some wonderful morsels of morels. Far and away the best book about mushrooms I have read in some time.
